Revolutionizing the plant-protein landscape through upcycling defatted seeds

Between protein and flour

Defatted seeds are the dry matter that’s left after oil extraction from sunflower, canola, cottonseed, etc.

Food for 1.5 billion people without growing any additional crops

Historically, defatted seeds have only been used in animal feed. Repurposing into human food can provide consumers with a cheap, clean, sustainable source of plant-based protein, and add value to supplier profits.

Protein and Fiber at the price of one

Replacing 30% of All-purpose flour with ground defatted seeds doubles the protein and fiber content, keeping costs the same.

Sam Fiorello, Danforth Center

"In order to meet our global needs of almost doubling our food output without increasing valuable resource use, we in the ag and food innovation community are going to have to think of creative and valuable solutions like this one."
